Description:

Maltose powder is a powdered sweetener made from maltose, usually by enzymatic conversion of the starchy portion of barley or other grains into maltose, and then dehydration and drying. The appearance is white to light yellow powder. It is a natural sweetener with a mild sweet taste and is less sweet than sucrose, about 40% as sweet as sucrose. It is a disaccharide composed of two glucose units connected by the A-1,4 glucoside bond, also known as maltobiose.

Application:

Maltose powder is widely used in food industry, especially in confectionery industry. For example, it can replace starch syrup to make hard candy, not only the sweetness is soft, and the product is not easy to color, high transparency, and has good sand resistance and anti-closing property; The palatability and flavor stability of gum and bubble gum can be obviously improved by using it to replace part of sucrose. The application of high malt syrup as sweetener in ice cream can improve the product structure and increase the expansion rate of the product
