Description:
Sodium Acid Pyrophosphate (SAPP) CAS NO.:7758-16-9 is an inorganic compound, a white powder or particle, soluble in water but insoluble in ethanol. When heated with dilute inorganic acids, the aqueous solution hydrolyzes into phosphoric acid, which has hygroscopicity. After absorbing water, it forms six crystalline hydrates, which decompose to form sodium metaphosphate when heated above 220 ℃. Mainly used as a fast fermenting agent, water retention agent, quality improver, for baked goods such as bread, biscuits, and meat.
