Description:
Anhydrous disodium hydrogen phosphate is a white powder with hygroscopic properties. The aqueous solution is weakly alkaline and easily soluble in water, but insoluble in ethanol.
 
Application:
Disodium hydrogen phosphate is used as a baking product in food to prevent oxidation and discoloration, as an emulsifier in dairy products to prevent protein coagulation, and as a chelating and emulsifying buffer in solid beverages.
